Cassava is available frozen but you may be lucky and find it fresh in Asian vegetable markets. Serve with grilled fish and salad, such as the grilled yellowtail.

Ingredients

Quantity Ingredient
200g cassava flour, (see note)
100g freshly grated coconut
1 teaspoon salt

Method

  1. Sift the cassava flour into a saucepan, then add the coconut and stir constantly over medium heat, with no oil, until the cassava and coconut form a rice-like starch. Serve in a communal bowl.

Note

  • It is preferable to make your own flour from fresh or frozen cassava, which is dried in the sun or in a very low oven and then grated.
