Summer berry ice tea

This is a refreshing drink, perfect for a hot summer’s day.

Ingredients

Quantity Ingredient
400ml water
4 teaspoons peggy’s summer berry tea leaves or any other good-quality mixed berry tea
1 lemon, juiced
1 orange, juiced
50g caster sugar
ice cubes and fresh mixed summer berries, to serve

Equipment

juicer or citrus press
glass jug or teapot
short glasses

Method

  1. Place the summer berry tea leaves into a glass jug or teapot.
  2. Bring the water to the boil and pour over the summer berry tea leaves. Leave to infuse for 3–5 minutes. Allow to cool.
  3. Place the lemon, orange juice and caster sugar in a saucepan and bring to the boil. Simmer until the sugar crystals have dissolved, then set aside to cool.
  4. Once the liquids are cool, mix them together. Chill.
  5. Serve cold in short glasses with ice and a few fresh summer berries.
