A light and refreshing iced mint tea cocktail perfect for a summer party. Serve in stylish vintage teacups to create a sophisticated yet relaxed look.

Ingredients

Quantity Ingredient
handful fresh mint leaves
1 teaspoon peggy’s peppermint & green tea leaves or any other good-quality peppermint tea
150ml water
150ml freshly squeezed lemon juice
150g caster sugar
50ml vodka
A splash creme de menthe liqueur
A splash freshly squeezed lime juice
ice cubes

Method

  1. Pick the fine leaf tips off the fresh mint twigs and place into iced water to keep them fresh.
  2. Place the remaining mint leaves together with the peppermint tea into a glass jug or teapot.
  3. Bring the water to the boil and pour over the peppermint and green tea leaves. Leave to infuse for 3 minutes. Allow to cool.
  4. Place the lemon juice and caster sugar in a saucepan and bring to the boil. Simmer until the sugar crystals have dissolved, then set aside to cool.
  5. Once the liquids are cool, mix them together and add the vodka, Creme de Menthe and lime juice. Chill.
  6. Serve cold in vintage teacups with ice and the fine leaf tips of fresh mint.
