Ingredients

Quantity Ingredient
2 eggs
10 egg yolks
35ml red wine vinegar
1 small garlic clove, grated
400ml groundnut oil or sunflower oil
300ml walnut oil
300g gorgonzola
4 lemons, juiced
large pinch salt
freshly ground black pepper

Method

  1. Whisk eggs, yolks, vinegar and garlic in a bowl until the mixture is smooth and creamy. Pour in the oils, one by one, until they are fully incorporated and the sauce is silky smooth in consistency. Spoon into a food processor, blend in the blue vein cheese, squeeze in the lemon juice and season. Pass through a fine chinois before use.
