Chicken, green pea and kritharaki soup

This very simple soup relies on using a full-flavoured home-made chicken stock, such as the one opposite. Kritharaki is a small rice-shaped pasta, similar to risoni. The soup can also be made with rice, instead of pasta, but you need to wash the rice well and to pre-cook it before adding it to the stock, to prevent the soup from turning cloudy.

Ingredients

Quantity Ingredient
1.5 litres Chicken stock
160g kritharaki or risoni pasta
300g fresh peas or good quality frozen peas
salt
freshly ground black pepper

Method

  1. In a large saucepan, bring the stock to a boil. Add the kritharaki slowly, stirring all the time. Boil for 10 minutes then add the peas. Simmer gently for a further 5 minutes or until the peas are tender. Season with salt and pepper to taste.
