This is a lovely summery salsa to serve with any grilled fish. Use full-flavoured ripe tomatoes, for sweetness and don’t mix the salad too much or it will go mushy. You only need to toss the ingredients gently so they are just combined.

Ingredients

Quantity Ingredient
4 ripe tomatoes, cut into 1 cm dice
1 avocado, cut into 1 cm dice
1/2 continental cucumber, cut into 1 cm dice
1 red onion, cut into 1 cm dice
1 cup coriander leaves
1 bullet chilli, finely chopped and seeds removed
salt
freshly ground black pepper
125ml extra virgin olive oil
1 lemon, juiced

Method

  1. Combine the vegetables, coriander leaves and chilli in a serving bowl. Season with salt and pepper then drizzle on the olive oil and lemon juice. Toss gently to combine and serve straight away.
