This sauce is full of bold flavours and is ideal to serve with pickled meats, tongue, ham, prosciutto or cold roast lamb. You can substitute parsley for the chervil if you can’t find it at the greengrocer, but chervil is very easy to grow and deserves a place in your vegetable garden for its delicate flavour.

Ingredients

Quantity Ingredient
1/2 bunch chervil, leaves picked and finely chopped
1/2 bunch french tarragon, leaves picked and finely chopped
1 small red onion, finely diced
6 gherkins or cornichons, finely diced
1 tablespoon capers, rinsed and dried
2 teaspoons seeded mustard
190ml extra virgin olive oil
125ml lemon juice
salt
freshly ground black pepper

Method

  1. Combine all the ingredients in a large mixing bowl. Taste and adjust the seasonings to your liking. Use straight away or store in an airtight jar in the fridge, where it will keep for up to 1 week.
