Ingredients

Quantity Ingredient
250ml vegetable oil
5 garlic cloves, peeled but left whole
3 egg yolks
60ml white wine vinegar
60ml lemon juice
salt
freshly ground black pepper
dash tabasco

Method

  1. Place the oil and garlic cloves in a saucepan and slowly bring to the boil. Lower the heat and simmer gently for 30 minutes. Remove from the heat and leave to cool completely before using.
  2. Place the egg yolks and vinegar in the bowl of a food processor. Whiz to combine. With the motor running, slowly drizzle in the garlic oil together with the garlic cloves, until the mixture emulsifies to form a mayonnaise. If it looks very oily and thick, add enough lemon juice to thin to the desired consistency. Season to taste with salt and pepper and a dash of Tabasco.
