Sardines baked in the oven

Fresh sardines are abundant in Greece, especially in the spring when they are plump. Because they are an oily fish they are particularly good for you. Just as importantly, they are very tasty. When we are in Greece we eat them almost every night, cooked on the barbecue, lightly pan-fried or baked in the oven.

Ingredients

Quantity Ingredient
800g fresh sardines
salt
freshly ground black pepper
1/2 cup flat-leaf parsley leaves, finely chopped
2 lemons, juiced
125ml extra virgin olive oil
125ml water

Method

  1. Preheat the oven to 200ºC.
  2. Clean the sardines by inserting your thumb and finger into the gill cavity and pulling the gills out. This will pull away the guts as well. Rub your fingers along the fish from tail to head, to remove any little scales. Leave the heads attached.
  3. Sprinkle the sardines lightly with salt and pepper and place them in a small baking tray or oven dish. Sprinkle on the chopped parsley. Mix the lemon juice with the oil and water and pour over the sardines. Place in the oven and bake for 20–25 minutes.
  4. Serve straight away with a crisp lettuce salad.
