Savoury cheese, mint and sultana cake

A Greek Cypriot recipe, given to me by a neighbour, Kyria Niki Landos. It is very simple and quick to put together.

Ingredients

Quantity Ingredient
530g self-raising flour
200g sultanas
1 cup mint leaves, chopped
300g cheddar cheese, grated
6 eggs
375ml corn oil
125g butter, melted
50g sesame seeds

Method

  1. Preheat the oven to 180ºC and grease and line a 23 cm cake tin.
  2. Sift the flour into a large mixing bowl. Stir in the sultanas, mint and cheese.
  3. In a separate mixing bowl, beat the eggs with the oil and the melted butter. Pour into the flour mixture and stir to combine. Spoon the mixture into the cake tin and sprinkle the surface with sesame seeds. Bake for 1 hour then remove from the oven and cool on a wire rack. Serve at room temperature.
