This dish is a celebration of the amazing tuna that are plentiful in the pure waters around the Portuguese islands of Madeira and the Azores. The recipe relies on cebolada, a method of cooking onions at a high heat without browning them, before adding vinegar and aromatics to make a marinade. This should be served at sunset somewhere sunny and warm, ideally with a glass of vinho verde, a light-bodied wine from the far north of Portugal.

Ingredients

200g tuna steak, ideally sushi grade
2 tablespoons extra-virgin olive oil
2 tablespoons olive oil
1 red onion, thinly sliced into rings
1 white onion, thinly sliced into rings
1 banana shallot, thinly sliced into rings
1 garlic clove, crushed
1 bay leaf
2 strips orange, zested
1 small cinnamon stick, broken in half
chardonnay vinegar or good-quality white wine vinegar, to taste
sea salt flakes
ground white pepper

Method

  1. Season the tuna with salt and pepper and drizzle it with the extra-virgin olive oil, then chill for 2–3 hours. As tuna is very delicate and oxidises quickly, I prefer to keep it in one piece.
  2. Heat the olive oil in a frying pan over a medium heat. Add the onions and shallot and cook for 5 minutes, or until lightly caramelised but still slightly crunchy. Season with salt and pepper during cooking. Add the garlic with the bay leaf, orange zest and cinnamon stick and cook for 2 minutes, or until fragrant. Add a splash of vinegar, cook for another few minutes, then remove from the pan and set aside to cool. You could even make this the day before to let the flavours develop more.
  3. Thinly slice the tuna and stir it into the onions. I like to leave it to marinate for 1 hour before serving at room temperature.
