A refreshing change to the usual espresso martini, but with all the delicious flavour. It might seem like a lot of booze … but once you taste it, I’m sure you’ll agree it’s just right.

Ingredients

Quantity Ingredient
600ml espresso, hot
150g demerara sugar
150ml vodka
3 1/2 tablespoons coffee liqueur
1 1/2 tablespoons orange liqueur
300ml double cream
1 vanilla pod, seeds scraped out
3 1/2 tablespoons caster sugar
3 1/2 tablespoons disaronno
coffee beans, to decorate

Method

  1. While the espresso is hot, mix in the sugar until it has completely dissolved. Add the vodka and liqueurs and allow the mixture to cool down completely. Pour into a deep freezerproof tray that will fit into and freeze. After 30 minutes, fork through the outside frozen layers, moving them to the centre, and return to the freezer. Repeat this process every 30 minutes or so until you are left with a tray of slushy crystals.
  2. Meanwhile, whip the cream with the vanilla seeds and caster sugar.
  3. When the granita is ready, spoon it into 10 small decorative glasses. Top with a dollop of the sweetened vanilla cream and decorate with a few crushed espresso beans.
