These can be enjoyed at any time of the day. If you fancy a lovely caffeine hit with a little extra kick, this is for you.

Ingredients

Quantity Ingredient
600ml vanilla ice cream
150ml disaronno
350ml espresso, hot
20 amaretti biscuits, to serve (optional)

Method

  1. Using a small ice-cream scoop or melon baller, scoop 20 small or 10 medium balls of ice cream and lay them on a baking tray lined with baking paper. Return to the freezer for about 1 hour. This will ensure they don’t melt too quickly when the hot coffee hits them.
  2. Mix the liqueur and coffee together and divide between 10 small glasses or espresso cups. Gently add a medium scoop or 2 small scoops of ice cream and serve immediately with the amaretti biscuits alongside.
  3. If you wish, you can put the ice cream straight into the serving glasses, freeze, then remove them, pour the coffee over and serve. If you want to do it this way, the serving glasses will have to be thick and robust, otherwise they might crack.
