Chicken polpette with saffron orzo

This lighter version of polpette made with chicken works really well with the saffron orzo (risoni). Kids absolutely love this, because the flavours are mellow; get them involved with the rolling of the polpette.

Ingredients

Quantity Ingredient
400g minced chicken
3 tablespoons flat-leaf parsley leaves, finely chopped
40g parmesan, grated, plus more to serve
1 lemon, finely zested
1 egg, lightly beaten
60g fresh breadcrumbs
sea salt
freshly ground black pepper
1 tablespoon olive oil
100ml fresh chicken stock

Saffron orzo

80g unsalted butter
2 banana shallots, finely chopped
2 garlic cloves, finely chopped
300g orzo
pinch saffron
1 litre chicken stock, hot
2 tablespoons oregano leaves, chopped, plus sprigs to garnish

Method

  1. Place the chicken, parsley, Parmesan, lemon zest, egg, breadcrumbs and seasoning into a large bowl and massage the meat with your hands until well combined.
  2. Take small amounts of the mixture and roll into 24 small walnut-sized balls. Cover and refrigerate for 1 hour to firm up.
  3. Meanwhile, for the orzo, melt half the butter in a saucepan, add the shallots and cook over a medium heat until softened. Add the garlic, cook for a further minute, then tip in the orzo and stir well to coat each grain. Add the saffron, then a ladle of stock, stirring well until all the liquid has been absorbed. Repeat until all the stock has been used and the pasta is creamy and cooked al dente. Remove from the heat and stir in the oregano and remaining butter.
  4. Place a large sauté pan over a medium-high heat, add the olive oil and the polpette and cook until golden brown all over. Add the chicken stock and bring up to a simmer, then reduce the heat and cook for 6–7 minutes or until the polpette are cooked through.
  5. Serve a spoonful of orzo in individual dishes or on spoons, top with a polpette and garnish with a little Parmesan and a sprig of oregano.
