We think our chocolate gelato is already pretty sexy, but we had to find something that would really spice it up, so we added in a berry and white chocolate ganache.

You need to use the recipe for Chocolate Fondant & Honey gelato, but for this recipe we don’t want the honey flavour, so simply substitute the honey portion with sugar. Feel free to use the White Chocolate or Milk Chocolate gelato recipes from that chapter too, as these work just as well with the ganache.

Method

  1. Assembly

    When you are ready to use the ganache in the gelato, remove it from the fridge and microwave gently so that it returns to a liquid state, but do not overheat. Melt it in 15-second bursts; you don’t want it too hot.
  2. Churn your gelato. As the gelato comes out of your churner, layer in the ganache; it will set as soon as it comes in contact with the gelato. Freeze for 1 hour before serving.
