Salad of cucumber, feta, capers and gherkins

This super-quick salad has lots of contrasting textures and flavours to make a really interesting mouthful. Either serve it on its own, with bread or flatbreads, or as part of a buffet or barbecue.

Ingredients

Quantity Ingredient
2 medium cucumbers
1 red onion, peeled and sliced
4 teaspoons small capers
3 large gherkins, sliced
3 tablespoons roughly chopped dill
300g feta cheese, broken into chunks

For the dressing

Quantity Ingredient
2 teaspoons dijon mustard
2 tablespoons white wine vinegar
A pinch caster sugar
6 tablespoons olive oil
sea salt
freshly ground black pepper

Method

  1. For the dressing, put all the ingredients into a bowl, adding salt and pepper to taste, and whisk to combine.
  2. Add the sliced red onion to the dressing and leave to stand for 10 minutes.
  3. Halve the cucumbers lengthways and scoop out the seeds with a teaspoon. Cut into slices on an angle and tip them into a large bowl. Add the red onion and dressing followed by the capers, gherkins and dill. Toss everything together well.
  4. Arrange the salad on a platter and crumble over the feta to serve.
