Ingredients

Quantity Ingredient
2 large banana shallots, peeled and thinly sliced
oil, for deep-frying
cornish sea salt

Method

  1. To cook the shallots, heat the oil in a deep-fryer or other suitable deep, heavy pan to 180°C and your oven to 120°C. Deep-fry the shallots in the hot oil until golden.
  2. Transfer the shallots to an oven tray and place in the oven for 30 minutes to dry out and crisp up. Drain on kitchen paper and season with a little salt. Serve hot.
