This brekkie burrito is by far one of our all-time most popular menu items at Smith & Daughters. It’s almost a way you can judge someone, really – their burrito-likeability-faction. We love this burrito and love even more that we’re unlocking its secret wonders to you and the world, so you can build it to its most personal and perfect ratios. Maybe you’ve always wished there were more beans? More cashew cheese? Now’s your opportunity. Build and enjoy, burrito masters.

Ingredients

Quantity Ingredient
1 large flour tortilla, (the bigger, the better)
2 tablespoons Chipotle cashew cheese
1/2 cup Brazilian black bean soup
1/2 cup Spicy ground chorizo
1/2 cup Garlic & chilli kale
1/2 cup The best tofu scramble
lime wedges, to serve

Serve with all of your favourite things:

Quantity Ingredient
Fresh guacamole, as much as you like
Salsa verde, any, ALL!
Coriander cashew cream, as much as you like
Green apple & jalapeño hot sauce
any other hot sauce
chocolate sauce, (just kidding)

Method

  1. To build the Smith & Daughters breakfast burrito, start by laying out your tortilla.
  2. Slap down as much chipotle cashew cheese as you can handle, then top with a big dollop of black beans.
  3. Next, pile on the chorizo and garlic and chilli kale, then top with the tofu scramble.
  4. Fold both ends over the filling, then roll tightly into a burrito – if you’ve come this far, I’m going to assume you know the shape of a burrito.
  5. If you have built the burrito using all warm ingredients then place your masterpiece straight into a dry frying pan over medium heat and toast on each side until lightly golden.
  6. If your filling ingredients are cold, heat in the microwave for 1–2 minutes before toasting in the frying pan.
