Sesame and ginger beef fillet with coriander noodles

If you can marinate the beef fillet for 30 minutes it will improve the flavour, but if you're short of time, it isn’t essential.

Ingredients

Quantity Ingredient
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon sesame oil
1 tablespoon grated root ginger
vegetable oil, for cooking
400g beef eye fillet
450g fresh hokkien noodles
2 spring onions, thinly sliced
3 tablespoons coriander leaves
1 teaspoon toasted sesame seeds

Method

  1. Whisk together the soy sauce, honey, sesame oil, ginger and 1 tablespoon of the vegetable oil. Pour half the marinade over the beef fillet and set the rest aside.
  2. Preheat the oven to 180°C. Heat a heavy-based frying pan over medium– high heat. Add a splash of oil to the pan, then cook the beef for 2–3 minutes on each side until browned. Cook in the oven for about 10 minutes, or until medium–rare. Remove and rest in a warm place for 10 minutes.
  3. Bring a pot of water to the boil, then cook the noodles for 3–4 minutes or until al dente. Drain. Mix the noodles with the reserved marinade, spring onions, coriander and sesame seeds. Slice the beef and serve on top of the noodles.
