Ingredients

Quantity Ingredient
oil, for cooking
2 eggs, lightly beaten
2 garlic cloves, crushed
1 small red chilli, seeded and finely diced
1 teaspoon grated root ginger
2 skinless chicken breast fillets, thinly sliced
4 spring onions, thinly sliced
200g snow peas, strings removed
200g broccolini, trimmed and sliced
1-2 tablespoons chicken stock or water
3 tablespoons soy sauce
100g frozen peas
550g hot cooked long-grain rice
110g bean sprouts
2 tablespoons hoisin sauce

Method

  1. Heat a wok over high heat. Add a splash of oil, then the egg. Swirl well to coat the side of the wok with the egg mixture. Cook briefly, then lift one edge away from the wok and roll up the omelette. Tip onto a chopping board and allow to cool.
  2. Return the wok to the heat and add another splash of oil and then the garlic, chilli and ginger. Cook for 1–2 minutes or until fragrant, stirring often to avoid burning. Add the chicken and cook for a further 2–3 minutes, or until browned. Transfer to a warm dish, cover and set aside.
  3. Return the wok to the heat, add more oil if necessary then add the spring onions and cook for 2–3 minutes, stirring often. Add the snow peas and broccolini. Add a splash of stock or water, cover with a lid and cook for 2 minutes. Add 1 tablespoon of the soy sauce, then the peas and the hot rice, breaking it up if necessary. Continue cooking and stirring constantly, until the rice is coloured by the sauce and everything is heated through.
  4. Slice the omelette thinly and add to the rice along with the chicken and bean sprouts. Cook until heated through. Add the hoisin sauce and remaining soy sauce to taste.
