Ingredients

Quantity Ingredient
500g asparagus, woody ends trimmed and cut into 3 cm pieces
2 smoked trout fillets
100g rocket leaves
150g cherry tomatoes, halved
2 avocados, peeled, stoned and sliced
2 tablespoons chopped flat-leaf parsley
1 lebanese cucumber, sliced
2 tablespoons Lemon dressing

Method

  1. Bring a large saucepan of water to the boil. Cook the asparagus for 1–2 minutes, then refresh under cold running water and pat dry.
  2. Break the trout fillets into chunks, removing all the skin and bones. Place in a large mixing bowl, along with the asparagus, rocket, tomatoes, avocado, parsley and cucumber. Toss with the lemon dressing and serve.

Variations

  • Smoked chicken, avocado and asparagus salad

    Instead of smoked trout, use 2 smoked chicken breast fillets, sliced.

    Smoked salmon, avocado and asparagus salad

    Instead of smoked trout, use 2 hot-smoked salmon fillets (these are thick pieces of smoked salmon, not the thin slices). Break into chunks and add to the salad.
