Ingredients

Quantity Ingredient
2 small red chillies, chopped
1 red shallot, roughly diced
2 garlic cloves, peeled
2 teaspoons grated root ginger
1/2 bunch coriander, roots and stalks only
1/2 lemongrass stem, thinly sliced, white part only
2 tablespoons fish sauce
3 tablespoons lime juice
2 tablespoons grated palm sugar
1 baby cos lettuce, leaves separated
1 cucumber, sliced
125g cherry tomatoes, halved
1 handful bean sprouts
4 spring onions, thinly sliced
20 prawns, cooked and peeled
1 handful coriander leaves
2 tablespoons vietnamese or regular mint leaves, roughly torn

Method

  1. To make a dressing, combine the chilli, shallot, garlic, ginger, coriander roots and stalks, and lemongrass in a food processor and process until it forms a paste. (You can use a mortle and pestle if you prefer.) Add the fish sauce, lime juice and palm sugar, to taste.
  2. Arrange the lettuce leaves on a large platter, then scatter the cucumber, tomatoes, bean sprouts and spring onion over the top.
  3. Toss the prawns with the dressing and place them on top of the salad. Sprinkle on the coriander and mint leaves and serve.
