Cooking fish with tomatoes, herbs and potatoes is one of the easiest ways to enjoy seafood for dinner. It’s a true one-pot wonder.

Ingredients

Quantity Ingredient
4 potatoes, peeled and diced
1 onion, sliced
2-3 garlic cloves, crushed
4 tomatoes, diced
2-3 thyme sprigs
1 tablespoon oregano leaves
1kg firm white fish fillets
olive oil, for cooking
1 lemon, juiced
375ml hot fish or chicken stock
salt and freshly ground black pepper
2 tablespoons chopped flat-leaf parsley

Method

  1. Preheat the oven to 180°C. Place the potatoes, onion, garlic, tomatoes and herbs into an ovenproof baking dish. Cut the fish into 3 cm chunks and place them on top. Drizzle with olive oil and squeeze the lemon juice over the top.
  2. Pour the hot stock over the other ingredients, season lightly with the salt and pepper and cover the dish with foil.
  3. Bake in the oven for 45 minutes, then check to see if the potatoes are cooked. If not, cook for an additional 5 minutes. Check the seasoning, then scatter on the parsley and serve with crusty bread and a green salad.
