Essential to almost all of these recipes is a large, ovenproof saucepan or casserole pot. I like to use a Le Creuset-style enamelled pot, as these hold their heat well and they are excellent for cooking the vegetables and spices on the stovetop first, before transferring the pot to the oven. The real beauty of this is the time and washing up you save by using only one pot, instead of additional frying pans.
