I have been cooking versions of these Thai chicken burgers for years now. Sometimes I add grated vegetables, at other times I make them into little meatballs and serve with noodles. They are always a winner.

Ingredients

Quantity Ingredient
500g minced chicken
1 tablespoon red or green thai curry paste
2 tablespoons sweet chilli sauce, plus extra, to serve
2 tablespoons chopped coriander leaves
1 egg
100g dry breadcrumbs
oil, for cooking

Method

  1. Preheat the oven to 180°C.
  2. Mix together the chicken, curry paste, sweet chilli sauce, coriander, egg and breadcrumbs. Shape the mixture into 8 burgers.
  3. Heat a heavy-based frying pan over medium–high heat and add a splash of oil. Cook the burgers in batches for 3–4 minutes on each side, or until golden brown. As the burgers cook, lift onto a baking tray and transfer to the preheated oven.
  4. Serve with sweet chilli sauce, steamed rice and ginger stir-fried greens.

Note

  • You can pan-fry with any type of oil you have handy. I prefer extra-virgin olive oil as it’s a pure oil that hasn’t been processed. It has a reasonably high burn temperature, so the oil won’t break down; this means it is easy to add some colour to the meat without it burning.
