The trick with tuna is only to cook it to medium–rare so it’s juicy and full of flavour.

Ingredients

Quantity Ingredient
1 lime, grated zested
4 tablespoon soy sauce
2 teaspoons sesame oil
1 teaspoon finely grated root ginger
4 x 200g tuna fillets

Method

  1. Mix the lime zest, soy sauce, sesame oil and ginger in a bowl and stir to combine. Pour over the tuna and leave to marinate for 20 minutes, time permitting.
  2. Heat a grill pan or barbecue grill. Cook the tuna over high heat for 2–3 minutes on each side — it should still be rare in the centre. Serve with soba noodles and soy mushrooms.

Variations

  • Sesame and soy salmon

    Swap the tuna for salmon fillets.
