Ingredients

Quantity Ingredient
2 tablespoons lime juice
1 tablespoon fish sauce
2 small red chillies, seeded and chopped
2 teaspoons grated root ginger
2-3 kaffir lime leaves, finely chopped, (optional)
oil, for cooking
4 x 150g fish fillets
soy sauce, to season
coriander leaves, to garnish

Method

  1. Mix together the lime juice, fish sauce, chilli, ginger and kaffir lime leaves, if using.
  2. Heat a large heavy-based frying pan over medium–high heat and add a generous splash of oil. Add the spice paste and cook for 2–3 minutes, stirring often, until fragrant.
  3. Add the fish and cook for 3–4 minutes, depending on thickness, until golden brown and cooked almost halfway. Turn and cook for a further 3–4 minutes.
  4. Remove the fish from the pan, add a couple of good shakes of soy sauce and a handful of coriander leaves and serve with steamed rice and stir-fried broccolini.
