Ingredients

Quantity Ingredient
olive oil, for cooking
1 onion, diced
1 tablespoon ras-el hanout
180g red lentils, washed
500ml vegetable stock
2 tablespoons chopped coriander leaves
125g ricotta cheese
75-100g dry breadcrumbs
salt and freshly ground black pepper

Method

  1. Heat a medium-sized saucepan over medium heat. Add 1–2 tablespoons of oil and the onion and cook for 3–4 minutes, until soft. Add the ras-el hanout and cook for 3–4 minutes, until fragrant. Add the lentils, stir well, and add enough stock to cover. Bring to the boil and then reduce the heat. Cook for 15 minutes, adding more stock as necessary. Cook until the lentils are tender and all the liquid has been absorbed.
  2. Place the cooked lentils in a bowl and add the coriander, ricotta and enough breadcrumbs to bring the mix together. Mix well and season to taste with the salt and pepper, then shape the mixture into 12 patties.
  3. Preheat the oven to 180°C.
  4. Heat a heavy-based frying pan over medium heat and add a splash of oil. Cook the patties in batches for 5–6 minutes on each side, or until golden brown. As the burgers cook, lift onto a baking tray and transfer to the preheated oven. Serve with fattouche salad.

Note

  • Ras-el hanout is a North African spice mix which you can find in Middle Eastern food stores and delicatessens. But you could also make up your own simpler Moroccan-inspired spice mix by combining 1 teaspoon each of ground cumin, coriander and smoked paprika with 1 teaspoon of harissa paste.
