Ingredients

800g minced beef
salt and freshly ground black pepper
olive oil, for cooking
2 onions, sliced
125ml red wine
250ml beef stock

Method

  1. Preheat the oven to 180°C. Season the beef with the salt and pepper and shape into 8 patties.
  2. Heat a heavy-based frying pan over medium–high heat and add a splash of oil. Cook the patties in batches for 3–4 minutes on each side, or until brown but still pink in the centre. As the patties cook, lift onto a baking tray and transfer to the preheated oven.

  4. When the patties are all cooked, add the onion to the pan with a little more oil, if necessary. Cook for 4–5 minutes, stirring often, until soft. Add the red wine and bring to the boil. Cook over high heat until reduced by half. Add the stock to the pan then lower the heat and simmer for 3–4 minutes.
  5. Divide the patties between four plates and pour on the red wine and onion sauce. Serve with mashed potato.
