When making kebabs, I think it is always better to buy whole steaks and to cut them up yourself. that way you know exactly what you’re getting, and not a bag of off-cuts.

Ingredients

Quantity Ingredient
500g steak, diced, (your choice of cut, such as fillet, scotch or porterhouse)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon smoked sweet paprika
salt and freshly ground black pepper
olive oil

Method

  1. Place the steak in a bowl. Mix the spices, salt and pepper with 1 tablespoon of olive oil and rub into the beef. Leave to marinate for 30 minutes, time permitting.
  2. Heat a barbecue grill until hot. Thread 3–4 pieces of beef onto 10 metal skewers. Brush lightly with olive oil, then cook for 6–7 minutes, turning once or twice. Serve with basic pilaf.

Note

  • Always brush the ingredients with oil just before you put them on the barbecue. If you brush oil directly onto the barbecue grill or plate it will just run off .
