Pork is a lovely sweet meat and combines well with spicy harissa and coriander.

Ingredients

Quantity Ingredient
1 tablespoon ground coriander
2 oranges, grated zested
1 tablespoon harissa paste
2 garlic cloves, crushed
1/2 teaspoon salt
3 tablespoons chopped coriander leaves
olive oil
freshly ground black pepper
4 pork cutlets

Method

  1. Combine the coriander, orange zest, harissa, garlic, salt and coriander leaves with 2 tablespoons of the olive oil and season with the pepper. Rub over the pork cutlets.
  2. Heat a barbecue grill until hot. Brush the cutlets lightly with oil, then cook for about 4–5 minutes, rotating once. Turn the cutlets over and cook for a further 4–5 minutes, or until cooked through. Serve with steamed rice and Slaw.
