Chicken yakitori skewers with sesame dipping sauce

Yakitori is a traditional, rather sweet Japanese marinade. there is no sugar added to this recipe but if you want to include it, you only need to use the bare minimum.

Ingredients

Quantity Ingredient
3 tablespoons light soy sauce
40ml mirin
1 teaspoon sesame oil
1 teaspoon sesame seeds
12 chicken tenderloins
oil, for cooking

Method

  1. Mix together the soy sauce, mirin, sesame oil and sesame seeds. Pour half over the chicken and leave to marinate for 20 minutes.
  2. Heat a barbecue grill until hot. Thread the chicken tenderloins on to 12 metal skewers and brush lightly with oil. Cook for 8–10 minutes, turning once or twice, until cooked through. Serve with the remaining sauce for dipping. Serve with Asian soba noodle and vegetable salad or spinach salad.

Light soy sauce

  • Light soy sauce is not some dietary special, but is actually the first pressing of soy beans. It has a superior flavour, in the same way as extra-virgin olive oil. It is mostly used as a seasoning because it is saltier, a lighter colour and adds a distinct flavour. Dark soy sauce is aged longer and is slightly thicker and darker. It is usually used in longer, slower methods of cooking as the flavour develops during the cooking time.
