Ingredients

Quantity Ingredient
1 tablespoon olive oil
1 tablespoon quince paste
salt and freshly ground black pepper
1 tablespoon thyme leaves
1.5kg pork scotch fillet
8-10 slices prosciutto

Method

  1. Preheat the oven to 180°C. Mix together the oil and quince paste until smooth. Season with the salt and pepper and add the thyme leaves. Rub the quince glaze over the pork then wrap the pork with prosciutto slices, to encase it completely. Place the pork in a baking dish and roast in the oven for 1–1 hour 30 minutes. Turn the pork over halfway through the cooking time.
  2. Check that the pork is cooked, by inserting a knife into the thickest part of the meat and counting to five. Test the temperature of the knife blade by placing it, cautiously, on the fleshy base part of your thumb. If it feels anything less than unbearably hot, it means that the internal core temperature is not high enough and the meat should be returned to the oven and cooked for longer.
  3. Test again after 10 minutes or so, and once the pork is cooked through, remove it from the oven, cover with foil and leave to rest in a warm place for 15 minutes.
  4. Carve the pork and serve with Italian potatoes.
