Ingredients

Quantity Ingredient
oil, for cooking
1 onion, diced
saffron threads
400g long-grain white rice
750ml vegetable or chicken stock
2 tablespoons chopped parsley

Method

  1. Preheat the oven to 180°C. Heat a large heavy-based ovenproof saucepan over medium heat. Add the oil, onions and saffron and cook for 4–5 minutes, until fragrant and soft. Add the rice and stir for 1–2 minutes. Add the stock and bring to the boil, stirring often.
  2. Reduce the heat, cover and cook in the oven for 30 minutes, or until the rice is tender and the stock has been absorbed. Allow to stand for 5 minutes before serving. Check the seasoning, add parsley and serve.
