Ingredients

Quantity Ingredient
1kg potatoes, such as desirée
4-6 garlic cloves
3-4 rosemary sprigs
2-3 sage sprigs
2-3 thyme sprigs
1 teaspoon fennel seeds
125ml white wine
2 tablespoons olive oil

Method

  1. Preheat the oven to 180°C. Don’t peel the potatoes or garlic. Slice the potatoes thinly, about 5 mm thick. Place the potato in a deep baking dish and add the garlic cloves, herbs, fennel seeds, wine, oil and season well with the salt and pepper. Toss to coat.
  2. Bake in the oven for 1 hour. Every 20 minutes or so remove from the oven and move the potato around so it browns evenly. When the potato is brown and crispy, serve.
