Ingredients

Quantity Ingredient
110g caster sugar
3 tablespoon water
60g butter
100g brown sugar
125ml single cream

Method

  1. Combine the caster sugar and water in a saucepan. Cook over low heat until the sugar dissolves, stirring occasionally until the liquid is clear. Once the sugar has all dissolved, raise the heat and bring to the boil.
  2. Cook for 12–15 minutes, or until the liquid begins to colour. You are aiming for a light, golden-caramel colour, not a dark brown, so be careful not to overcook it.
  3. Remove from the heat and carefully add the butter and brown sugar. Return to the heat and simmer until smooth. Stir in the cream and whisk gently until combined. Serve warm.
