Ingredients

Quantity Ingredient
500g mixed berries, fresh or frozen
2 granny smith apples, peeled and cut into chunks
1 orange, grated zested
125g caster sugar
80g unsalted butter, softened and diced
150g self-raising flour
40g almond meal
150g buttermilk
2 tablespoons flaked almonds
1-2 tablespoons raw sugar

Method

  1. Preheat the oven to 180°C.
  2. Mix the berries, apple and orange zest with 55 g of the caster sugar and spoon into a 1.8 litre baking dish.
  3. To make the cobbler topping, rub the butter with the flour, almond meal and remaining caster sugar until it resembles breadcrumbs (or whiz in the food processor). Add the buttermilk and mix until it forms a soft dough.
  4. Dollop spoonfuls of the cobbler topping over the fruit until just covered. Sprinkle with the flaked almonds and raw sugar and bake in the oven for 35–40 minutes, or until golden brown and bubbling. Serve with your choice of whipped cream or ice-cream.
