In Italy there are many recipes calling for ricotta or other cheeses, and the range of fresh organic versions available is amazing. Italians love their fresh cheeses, and I would say I was fairly addicted! Ricotta has a heavenly effect when mixed into desserts, and semolina creates a lovely texture. Ingredients

Quantity Ingredient
2 tablespoons butter, plus extra for greasing
250g semolina flour, plus extra for dusting
1 litre cold milk
2 lemons, zest pared into strips from one, zest finely grated from the other
1 orange, zest pared
400g ricotta cheese
6 eggs
1 teaspoon vanilla paste or extract
200g caster sugar
pinch salt

Method

  1. Preheat the oven to 180°C. Butter a 23 cm springform cake tin and dust with semolina flour.
  2. Put the milk into a saucepan and pour in the semolina flour. Stir to mix with a balloon whisk. Set the pan over a medium heat and add the pared lemon and orange zest. Cook, stirring constantly with the balloon whisk to avoid scorching, until starting to thicken, then remove and discard all the pared zest. Remove the pan from the heat and add the butter, stirring until melted. Set aside to cool.
  3. Meanwhile, set a fine-mesh sieve over a large bowl and press the ricotta through using a spoon, to remove any lumps. Stir in the eggs and vanilla, then add the sugar, salt and the grated lemon zest. Now add the semolina and milk mixture and gently stir. Transfer the mixture to the bowl of a stand mixer fitted with a whisk attachment (or use a hand-held electric whisk) and whisk on a medium speed for about 3 minutes.
  4. Pour into the prepared tin and bake for about 45 minutes or until dark golden on top. Leave to cool in the tin for 20 minutes before unmoulding to serve.
