I love winter. I love rain and snow, and I love comfort food. These cookies have the fragrance of a warm, cosy night at home, sipping a cup of tea or coffee and watching a movie. Give me my cats, too, and I’m in heaven!

Ingredients

150g butter, at room temperature
100g caster sugar
pinch salt
1/4 teaspoon ground nutmeg
1 orange, Finely grated zested
2 egg yolks
250g plain flour, plus extra for dusting
80g demerara sugar

Method

  1. In the bowl of a stand mixer, or in a mixing bowl and using hand-held electric beaters, beat the butter and caster sugar together until fluffy. Add the salt, nutmeg, orange zest and one of the egg yolks. Add the flour and beat until a dough is formed. Transfer the dough to a lightly floured surface and knead to form a log. Wrap in cling film (plastic wrap) and refrigerate for at least 1 hour (or overnight).
  2. Preheat the oven to 200°C and line a baking sheet with baking parchment. In a large shallow dish, briefly whisk the remaining egg yolk. Remove the dough from the fridge and roll it through the egg yolk to coat. (Alternatively, brush the egg yolk all over the log using a pastry brush.) Roll the log through the demerara sugar until fully coated.
  3. Slice the log into about 6-mm rounds and transfer to the prepared baking sheet. Bake for 10–15 minutes until lightly golden. Leave to cool on the baking sheet.
