This recipe comes from my Aunt Rose’s cookbook. She is from the Philippines and used to make masses of these cookies back when she lived there. She was kind enough to give me this recipe when I was a young girl and wanted to bake but didn’t have the confidence that I have now. It’s a foolproof recipe and fun to make with your kids.

Ingredients

Quantity Ingredient
3 egg whites
150g caster sugar
250g finely shredded desiccated coconut
pinch salt

Method

  1. Preheat the oven to 170°C. Line a large baking sheet with baking parchment. Fit a piping bag with a plain nozzle. I use a Wilton 1A or Ateco 806 large round tip.
  2. In the bowl of a stand mixer fitted with a whisk attachment (or using a mixing bowl and handheld electric whisk), whisk the egg whites until frothy. Add the sugar and whisk until stiff peaks form. Fold in the desiccated coconut.
  3. Fill the prepared piping bag with the mixture and pipe rounds directly on the baking parchment, leaving some space between each cookie.
  4. Bake for about 15 minutes until golden. Leave to cool completely on the baking sheet (if you touch them when still warm they will break). Delicious dropped into yogurt, or served on a mountain of ice cream!
