Vallejo’s Smoothie. Named in memory of the awesome Andina poet César Vallejo, this perfect green smoothie has been on our menu since we opened Andina. We change our menu frequently, but this recipe is uncomplicated, unadulterated and light (and it has an eye-popping bright green colour), and that makes it enduring.

Ingredients

Quantity Ingredient
1/2 ripe avocado, flesh roughly chopped
300ml pear juice
50ml lime juice
20 mint leaves, plus 2 sprigs to decorate
a large handful baby spinach leaves

Method

  1. Put all the ingredients into a food processor or blender with 100ml of water and a few ice cubes. Blitz until very smooth. Serve in 2 tall glasses or large tumblers and decorate each serving with a sprig of mint. Serve immediately
