Fig, Banana & Lucuma Shake. The name of this shake is the Quechua for the word ‘star’. The drink is energizing for any time of day, but especially in the early morning. Our Andina drinks’ maestro, Jarek Kaszynski, who opens Andina for breakfast, has become a bit of a legend in East London – partly because of his enduring positivity, but also because he is the man who rustles up this wake-up call.

Ingredients

Quantity Ingredient
3 dried ready-to-eat figs
1/2 banana
30g lucuma puree, mixed with 20ml of any type of milk
or 10g lucuma powder, mixed with 20ml of any type of milk
300ml pressed apple juice
200ml quinoa, almond or semi-skimmed milk
yacon or maple syrup, to serve (optional)
slices dried fig, to decorate

Method

  1. Put all the ingredients except the syrup and slices of dried fig into a food processor or blender and blitz until as smooth as it can be – the fig seeds will resist! Pour over ice into 2 tall glasses or large tumblers and drizzle over a little syrup if you wish. Decorate each glass with a slice of dried fig and serve immediately.
