Breakfast in a Cup. Fuerza, meaning ‘strength’, is warming, filling, quick to make and a meal in itself. It’s like a strengthening breakfast in a cup. This recipe is a take on the hot quinoa drinks made by the Andina ladies who have street carts, and who get up at the crack of dawn to serve their own versions to their customers, adding unique combinations of herbs, spices and fruits.

Ingredients

Quantity Ingredient
20g uncooked mixed quinoa (red, white and black)
or 60g cooked mixed quinoa
500ml almond milk, plus extra to thin, if necessary
1 apple, cored and roughly chopped
1 teaspoon maca powder

Method

  1. If you’re using uncooked quinoa, cook it according to the instructions.
  2. Put the almond milk in a saucepan over a high heat. Add the cooked quinoa and the chopped apple. Bring to the boil, then reduce the heat to low and allow to simmer for 5 minutes until the apple is tender. Whisk in the maca powder.
  3. Tip the contents of the saucepan into a food processor or blender and blitz until completely smooth. Serve hot (reheat it gently in a pan, if necessary). You can reheat any leftovers the following day.

Note

  • The result can be as liquid or as thick as you like – depending upon your preference and whether you want to drink it or to eat it with a spoon. Simply add more almond milk for a thinner consistency.
