Ingredients

Quantity Ingredient
200ml white rice vinegar
150g caster sugar
1 piece pickled garlic
2 coriander roots, scraped and cleaned

Method

  1. Combine the vinegar, sugar, pickled garlic and coriander roots in a small saucepan over a medium–high heat, bring to the boil and simmer for 5 minutes. Strain the liquid and cool. It keeps indefinitely when stored in an airtight container in the refrigerator.
