Ingredients

Quantity Ingredient
3 long red chillies, seeded
2 red bird’s eye chillies
2 garlic cloves, peeled
2 coriander roots, scraped and cleaned
1 teaspoon sea salt
30g palm sugar, shaved
1 1/2 tablespoons fish sauce
200ml lime juice

Method

  1. Pound the long and bird’s eye chillies, garlic, coriander roots and salt to a uniform paste in a mortar and pestle.
  2. Add the palm sugar and pound to combine. Add the fish sauce and lime juice and mix thoroughly. Taste – the flavour should be a balance of sweet, sour and salty. It keeps in the refrigerator for 24 hours.
