Ingredients

Quantity Ingredient
2 garlic cloves, peeled
3 coriander roots, scraped and cleaned
4 green bird’s eye chillies
2 long green chillies, seeded and chopped
3 cm piece fresh galangal, peeled
40g palm sugar, shaved
1 1/2 tablespoons fish sauce
300ml lime juice

Method

  1. Pound the garlic, coriander roots, bird’s eye and long chillies and galangal in a mortar and pestle to a uniform paste.
  2. Add the palm sugar and fish sauce, pour over the lime juice and mix thoroughly. The dressing should taste hot, sweet, sour and salty. Add more palm sugar if needed to make it sweeter or fish sauce to make it more salty. It keeps in the refrigerator for 24 hours.
