This is a useful way to use up little bits of blue cheese and can transform a salad into something rather special. It is ideal with robust leaves like little gem lettuce and chicory, but I wouldn’t try it on more delicate leaves as it will overpower them.

Ingredients

Quantity Ingredient
1 tablespoon cider vinegar
1/2 teaspoon tewkesbury mustard
20g blue cheese
2 tablespoons cold-pressed rapeseed oil
2 tablespoons vegetable or corn oil
salt
freshly ground black pepper

Method

  1. Blend the cider vinegar, mustard, blue cheese and oils together in a blender and season with salt and pepper to taste. If the dressing is too thick, thin it with a little water.
