Such a simple but lovely thing to whip up. Swirl it through or drizzle it on pretty much anything for a burst of flavour.

Ingredients

Quantity Ingredient
125g raspberries, fresh or frozen
1 1/2 tablespoons maple syrup
sprig of mint, leaves only

Method

  1. Pop the raspberries and maple syrup into a blender or food processor and blitz until smooth. Add the fresh mint and blend again for a few seconds, adding a splash or two of water to get the desired consistency. Store in a sealed jar in the fridge. It will keep in the fridge for 2–3 days.
