Basic ‘banilla’ soft-serve nice cream

It is so easy and quick to tranform bananas into a deliciously creamy nice cream. This is my go-to method for a basic soft-serve nice cream, celebrating that gorgeous banana taste. Ideally, use 1–2 bananas per person.


Quantity Ingredient
1-2 large bananas, peeled and frozen
1/4 teaspoon vanilla extract
A pinch sea salt


  1. Pop all the ingredients in a food processor and blend. At first, the bananas will resemble banana breadcrumbs – don’t panic! Scrape down the sides of the food processor every 30 seconds, and keep blending.
  2. Blend until it’s really creamy and soft-serve-like in texture.
  3. Serve immediately.

The perfect dairy-free nice cream

  • The art of nice cream is actually more scientific than you might think. To stop your delicious creation freezing into a solid banana ice cube you need to add a balance of fats and sugars, but don’t worry – there are lots of healthy fats and unrefined sugars available.

    Here are some of our favourites:


  • Fats are critical in making sure your nice cream is thick and creamy. There are lots of healthy fats to choose from that can give your nice-cream creations a delicious and rich texture.


    Coconut milk* or coconut oil

    Nuts or nut butters Plant-based milks (almond, cashew, soy milks)

    Raw cacao butter

    Use full-fat tinned coconut milk and keep it in the fridge overnight (to allow it to separate), then use the thick, white coconut cream that settles at the top. Save the watery coconut milk for another recipe or add to your morning smoothie.


  • At Nana Nice Cream HQ, we favour natural, fruit-based sweeteners over refined sugar. It’s worth noting that liquid sweeteners tend to produce nice creams with the fewest ice crystals.

    Agave syrup

    Apple purée

    Coconut nectar or coconut sugar

    Date syrup or dates (we like Medjool dates)

    Grape juice


    Maple syrup

    Pineapple juice

    Like most good recipes, ours aren’t prescriptive, so please don’t stress if you don’t have the exact ingredients to hand. Although we’ve tried to suggest alternatives, feel free to swap in and swap out as you like. If you aren’t a fan of maple syrup, simply use coconut nectar or agave syrup instead. If you want to make your nice cream only with fruit, then play around with apple purée, grapes and dates. It’s just a case of finding a balance, and what works for you. The process of making nice cream, like all the best things, is meant to be fun, so relax and enjoy.
