Method

  1. Choose small even-sized potatoes for an attractive appearance, otherwise halve or quarter large ones. Preheat the oven to 200°C. Peel the potatoes and boil for 5 minutes. Drain and mark surface with a fork. Put into a roasting pan containing 6 mm of hot fat or oil, sprinkle lightly with salt and roast for 40–50 minutes or until golden and crusty, turning and basting occasionally.
